Madiran and pacherenc of
the vic-bihl divide the same country of
name. The madiran is red whereas the
pacherenc is white. Its name comes from the
inhabitant of Béarn “pachets in renc” (=
stakes in row) and “Vic-Bihl” is the name of
the Western part of the zone (= old
country). The white can dry, fresh and be
scented, or marrowy, be obtained by
passerillage and which have a well marked
personality.
After the attacks of will phylloxéra at the
end of XIXe century, the vineyard of madiran
had almost disappeared. Its revival since
1950 is spectacular, passing 40 ha to 1500
ha. The vines are established on successive
hills whose grounds are particularly varied,
energy of muddy boulbenes in bottom of the
slopes to the rollers in top of the hills
and the ground argilo-limestones which give
the most complex wines..
Jams, honey, canned : of
duck (foie gras, pie, crystallized,
steaklet); of trout of the Pyrenees (soup,
rillettes, paved Pyrenean sauce…); garbure
(country soup with beans tarbais and
conserve of duck); bean tarbais.

In the Fifties, it failed well to disappear,
not answering the requirements of intensive
production preached at this period… But the
return to the sure values and the good
tastes of formerly enabled him to make a
true return on the front of the scene…
The race is old and very pure, its
conditions of breeding answer an ancestral
know-how. Its meat is considered excellent,
of an incredible and goûteuse smoothness
like step two! Ideally used for the
saltings, the black pig allows the
realization of hams absolutely sublimes. A
pure happiness...

SMALL FRUITS OF
PYRENEES
It is during year 1982 that Maurice
Guillaume and Patrick Lesgards choose to
take again a farm at the fine bottom of the
Hautes-Pyrénées with Lies, small village in
the broken relief of Baronnies. To 700 m of
altitude, in a preserved site, they decide
to plant small fruits: strawberry of wood,
strawberry, raspberry, blackcurrants,
currant, blackberry, bilberry,…
Initially, the fruits are sold fresh on the
markets and to the retailers and of the
local wholesalers. In 1986, to develop their
production, they transform their small
fruits into top-of-the-range jam, liquors,
aperitifs and vinegar
The cake with the pin or Rock of the
Pyrenees.
The receipt of the cake to the pin was
brought back from the Caucasus by the armies
of Napoleon. It was immediately adopted by
the rural populations of the Pyrenees which
made a cake of festival of it. It is called
also the cake of married or the shepherdess.
Fruit pastes of the Abbey of Tournay: a
score of monks live there today. The
community lives of its work, confectionery,
Pâte of fruits and chocolate.
Cartons: Manufacture consists with the
cooking of a mixture of water and sugar.
This cooked sugar is versed liquid (between
rules) on a marble plate. At this time one
mixes the flavour with sugar, while making
